I was born loving carbs, fats, dairy and sugar.
And then I grew up and married a man who really knows how to cook.
And I met some amazing friends who also really know how to cook.
And now I love things like asparagus and hummus and edamame.
Mix together:
A bunch of Leafy Green Things (I prefer fresh spinach but I think most lettuces would work -except for iceberg. It only belongs on hamburgers.)
Sliced Red/Purple Onion
A bunch of Nut halves (Walnuts & Pecans are my top choices)
A good dose of Cheese – Any kind on hand : Feta, Colby Jack, Blue Cheese, Parmesan, Fresh Mozzarella
Some Fruit – Sliced Pears, Apples, Strawberries, Craisins
A Protein (if you feel like it) – Boiled Egg, Grilled Salmon, Grilled Chicken
And then coat it well with Annie’s Goddess Dressing (or the wonderful homemade recipe below.)
Remember a pre-dressed & tossed salad is always so much yummier!!
It is amazingly yummy and changed at-home salad eating for me forever.
And even better than Annie’s is Natalie & Alison’s version that you can make at home:
goddess dressing
1 cup sunflower oil
¼ cup tahini
1 tablespoon toasted sesame seeds
2-3 cloves garlic
1 tablespoon chives*
1 tablespoon parsley*
1/3 cup apple cider vinegar
1/3 cup soy sauce
½ teaspoon kosher salt
juice of 1 lemon
place all ingredients in a food processor and pulse until smooth.

OMG! I LOVE Godess dressing!! I used to get the godess salad from Rainbow when I worked downtown but it's never as good when I have it home.
