3 years ago (man how time flies!) I found this recipe on Jane’s Apron.
It has become a family favorite.
I love it, not only because it is easy peasy and delicious, but also because I feel less wasteful when I make it (finally something to do with all those old bananas besides banana bread!)
As I can never leave well-enough alone, I have modified the recipe a wee bit, mostly because I never have exactly everything on hand so I have had to “make it work.”
Banana Bread Pie (JollyGoode Style)
3 very ripe bananas
3/4 cup biscuit mix (like Bisquick)
3 large eggs
1 can (14 oz.) sweetened condensed milk
1/4 Cup Milk
2 Tbsp. butter, melted
2 tsp vanilla
Place bananas in a large mixing bowl and mash with an electric mixer until smooth. Add the rest of the ingredients and mix until well blended. Pour the mixture into 2 greased 9 in pie pans, and bake at 400 for
30-35 minutes. The pie should be caramelized on the edges but still a little soft in the center
Goes great with vanillia ice cream or homemade whip cream while warm.
We even eat it plain for breakfast.

This looks yummy. I tinker as well ( its no wonder my recipes never look the same) what do you think- I can I use the Trader joe's biscuit mix. Not sure if it translates over from Bisquick.

My mouth is watering, this pie looks delicious. I'm with you on banana wasting, bet my picky ones would gobble this right up.
